🥘 Ingredients
- 250 grams fresh spinach leaves (palak)
- 200 grams paneer (cubed)
- 1 medium onion (finely chopped)
- 2 medium tomatoes (pureed)
- 1 tablespoon ginger-garlic paste
- 2 green chilies
- 1 teaspoon cumin seeds
- ½ teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 2 tablespoons fresh cream or malai (optional)
- 2 tablespoons oil or ghee
- Salt to taste
- Water as needed
Instructions – Step-by-Step
Step 1: Blanch the Spinach
- Boil 4–5 cups of water. Add washed spinach leaves and let them boil for 2–3 minutes.
- Immediately transfer them into ice-cold water to retain the green color.

Step 2: Make Spinach Puree
- Blend the blanched spinach with green chilies into a smooth puree.

Step 3: Sauté Onions and Garlic
- Heat oil or ghee in a pan.
- Add cumin seeds. Once they splutter, add chopped onions and sauté until golden.
- Add ginger-garlic paste and cook until raw smell disappears.

Step 4: Cook Tomatoes and Spices
- Add tomato puree. Cook for 4–5 minutes until oil starts separating.
- Add turmeric, chili powder, and salt. Mix well.

Step 5: Add Spinach Puree
- Pour in the spinach puree. Mix and cook for 5–6 minutes.
- Add a little water to adjust consistency if needed.

Step 6: Add Paneer Cubes
- Add paneer cubes and simmer for 3–4 minutes.
- Gently stir to coat the paneer with the gravy.

Step 7: Finish with Cream and Garam Masala

- Add garam masala and cream. Mix well and turn off the flame.
Step 8: Serve Hot
- Serve hot with roti, naan, or jeera rice.
