  • 250 grams fresh spinach leaves (palak)
  • 200 grams paneer (cubed)

  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chili powder

  • 2 tablespoons fresh cream or malai (optional)
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Water as needed

Instructions – Step-by-Step

Step 1: Blanch the Spinach

  • Boil 4–5 cups of water. Add washed spinach leaves and let them boil for 2–3 minutes.
  • Immediately transfer them into ice-cold water to retain the green color.

Step 2: Make Spinach Puree

  • Blend the blanched spinach with green chilies into a smooth puree.

Step 3: Sauté Onions and Garlic

  • Heat oil or ghee in a pan.
  • Add cumin seeds. Once they splutter, add chopped onions and sauté until golden.
  • Add ginger-garlic paste and cook until raw smell disappears.

Step 4: Cook Tomatoes and Spices

  • Add tomato puree. Cook for 4–5 minutes until oil starts separating.
  • Add turmeric, chili powder, and salt. Mix well.

Step 5: Add Spinach Puree

  • Pour in the spinach puree. Mix and cook for 5–6 minutes.
  • Add a little water to adjust consistency if needed.

Step 6: Add Paneer Cubes

  • Add paneer cubes and simmer for 3–4 minutes.
  • Gently stir to coat the paneer with the gravy.

Step 7: Finish with Cream and Garam Masala

  • Add garam masala and cream. Mix well and turn off the flame.

Step 8: Serve Hot

  • Serve hot with roti, naan, or jeera rice.
